Life can be busy, leaving little time for hour-long meal preparation. Plus, if you’re anything like me, the last place you want to spend your spare time is in the kitchen trying to throw together a last-minute meal. This exact scenario has happened to me on more than one occasion – leading me to my recent research on quick and easy meals.
